MEV
Value extracted by choosing what order transactions go in.
MEV, maximal extractable value, is profit a block producer can take purely from deciding which transactions to include and in what order. Reordering, inserting or dropping transactions can be worth money on its own.
It matters most on chains with heavy on-chain trading, where transaction order changes prices. On a simple payments chain there is very little to extract beyond the ordinary fees.
