Software whose code is public to read, audit and fork.
Open-source software publishes its full source code for anyone to read, audit, modify and redistribute. Nearly all serious blockchain node software is open source, because "do not trust, verify" requires readable code.
Mining software is mixed: many miners are closed-source with a dev fee. Reputation, checksums and official release channels stand in where the code cannot be read.
