Volatility is how much and how fast a coin's price moves. Crypto is famously volatile, which is why mining income measured in fiat can change quickly even when your hashrate is steady.
A calculator estimate is a snapshot: price volatility, difficulty and luck all move it, so treat any projection as an estimate rather than a promise.
